@Gelzamac: We always cleaned them with a damp towel. Orginally I was taught to clean them with vegetable oil. But truthfully, they were harder to clean with oil. I read in the Joy of Cooking cookbook, that 1 in 10,000 eggs are contaminated where people can get sick. That’s good to know about the egg tilting upward if they are old. Egg shells are porous for sure and also when they are old the protective membrane shrinks which allows the air to enter the egg. Thanks for commenting.(:

I’ve heard not to wash eggs in water but I still do and have never become sick from it. I rinse the eggs then let them sit a few minutes damp then I scrub them. They are much easier to clean that way. Also to see how old an egg is: submerge in water. If they tilt-up they are old. The older the egg the more air is absorbed through the shell.

@Caveman0713: To bottom of the egg is pointed if it’s a rooster. A hen is very round at the bottom. It takes a while but with practice you can see the difference immediately.

I wash mine in our lake which is about 20 feet from our hen house. Although I never completely grasped how to tell the difference between male and female eggs, I learned most of this from my grandparents.

@vention4wh: The same with aging cheese too. When I lived in Italy we didn’t have a fridge. We had crocks of cheese covered in oil also in a cool dark place. The cheese ages quickly and stores for a long time. Or just dry the cheese in the open air. It will not spoil. and that’s how we made parmasan cheese too.

@dave777blaster: 1 dollar a dozen is cheap. Good for you. You can also dehydrate eggs, but I like the oil method in the mason jar. The 1 inch of vegetable oil keeps the eggs good for about 3 month.

You can freeze …
You can freeze eggs too but would only be good for baking purposes and not as good as fresh eggs by a long shot.
I buy mine for a 1$ a dozen from a friend up the road.

@vention4wh: Ok, we did store eggs, but we cracked the eggs open and put them in mason jars and covered them with 1 inch of vegetable oil. The eggs stay good for about 3 months. If you use brine and water, the eggs get really salty. Brine is made with one cup of kosher salt-no minerals and 1 gallon of water. The smaller salt molecules goes inbetween the water molecules, and doesn’t raise the volume of the water. When the density of brine is made correctly, a whole egg will float..

I heard something about how people used to preserve eggs before refrigeration. I head that they coated them with oil for shorter term storage but for longer term they used to keep them under water in some kind of brine soluation. Have you head anything about this?
