thanks for such a great, accessible introduction to a topic that is experiencing such a big resurgence of interest. even though i don’t own chickens, knowing more about the nutritional value of locally raised, small-farm eggs has motivated me to commit to only purchasing my eggs from local farms. go, chickens!

I like your hens the are nice looking birds. I have 70 free range hens and 5 roosters. they are great pets all of them are named. I hatched about 10 of them myself. =D

when is your next vid coming out… i have seen a dozen others on youtube and although i am also researching chickens in literature it is always good to hear it compacted to a 1 to 10 min video. more people need to know that you don’t need a cockerel for eggs (only to break up fights between the hens). well done

On the other hand, some argue that cooking eggs may make the amino acid cysteine less available. Raw egg proponents also contend that they have increased energy and better digestion.

From Ashley: There’s a bit of a debate over whether or not cooking harms any of the nutrients present in fresh eggs. On the one hand, cooking eggs is the only way to remove any salmonella bacteria that may present. Also, an anti-nutrient called avidin is found in raw egg whites. This substance binds to biotin found in raw eggs whites, a B vitamin, preventing it from being absorbed by the body. When cooked, most of the avidin is destroyed, making the biotin available.
